Coconut Cod Chowder

1 teaspoon coconut oil

5 tablespoons chopped shallots

1 teaspoon minced ginger

2 cloves minced garlic

2 stalks celery, chopped

200g sweet potato (about 2 small sweet potatoes)

2 cups canned coconut milk (about one can)

1/2 cup water

1/2 teaspoon salt

1/2 teaspoon turmeric

2 cod fillets

1/4 cup lime juice

chopped cilantro, optional

In a large pot over medium heat, add oil and sauté shallot for 3 minutes. Add the ginger, garlic, and celery and cook for one additional minute. Add sweet potatoes, coconut milk, water, salt, and turmeric and cook for 10 minutes. Add cod and simmer for 9 minutes until cod is cooked through. Remove from heat and add lime juice and cilantro (if using). Ladle into bowls and enjoy!
