Turkey Chili

1 tablespoon extra virgin olive oil

8 ounces extra lean ground turkey (1/2 pound)

1/2 yellow onion, chopped

1 cup canned diced tomatoes, including liquid

1 cup canned crushed tomatoes, including liquid

1 cup canned black beans, drained and rinsed

1 cup canned red kidney beans, drained and rinsed

1 carrot, chopped

2 stalks celery, chopped

1/2 red bell pepper, chopped

1/2 jalapeno pepper, chopped

1 tablespoon chili powder

1/2 teaspoon cumin

1/2 teaspoon salt

Heat oil in a large pot over medium heat, then cook turkey and onion for 6 minutes or until turkey is cooked. Then add all the remaining ingredients and combine. Boil then reduce heat to simmer and cook for 30 minutes. Ladle into bowls and enjoy!

Serves 4. Tip – Double the recipe to use full cans of tomatoes and beans.
